Side Dish
Ingredients:
2 1/2 cups broccoli florets
12 ounces tri-colored rotini pasta
1/2 cup light olive oil or canola oil
6 Tablespoons red wine vinegar
1-1 1/2 teaspoons salt
3 cloves garlic, minced
2-3 teaspoons Stonewall Kitchen Habanero Mango Aioli
3 Tablespoons fresh basil, chopped
2 Tablespoons fresh parsley, chopped
1 1/2 cups cherry tomatoes, quartered
1/2 cup Parmesan cheese, coarsely grated
Instructions:
Bring 4 quarts of salted water to a boil. Add broccoli and cook for 3 minutes. Cool in an ice water bath, then drain.
Cook pasta according to package directions, drain, and let cool.
In a large bowl, whisk together oil, red wine vinegar, salt, garlic, and Habanero Mango Aioli.
Add cooled pasta, basil, parsley, tomatoes, Parmesan, and broccoli. Toss well.
Serve cold or at room temperature.
